Every rock is covered in a kind of minute to large indentations that can act as a tripod for the rock to stand upright, or in most orientations you can think of with other rocks. By giving close attention to the feeling of the rocks, you will start to feel even the least significant bangs as the notches of the rocks in contact are moving over one another. Vegetarian Dinner



 Quinoa Cakes with Eggplant Ragu


The end of summer is upon us, which means the farmers markets are starting to look a little purple. Eggplants in every shape and size are sprouting up in all the farm stands, begging to be picked from the bunch and brought home for a delicious vegetarian dish. Most of the time eggplants tend to make their dinnertime debut fried in breadcrumbs and smothered in cheese, but eggplants don’t need to contribute to an unhealthy meal. In fact, they are much better served in a dish that highlights their hearty flavor! We love this recipe for Quinoa Cakes with Eggplant Ragu. It’s a vegetarian dish that is sure to please even your most carnivorous dinner guest!
Quinoa Cakes with Eggplant and Tomato Ragu
Adapted from Epicurious
For quinoa cakes
  • 1 cup cooked quinoa
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/2 cup whole wheat or gluten-free bread crumbs (make your own by toasting crumbling bread slices)
For topping
  • 1 1/2 pounds eggplant, cut into 1/2-inch cubes
  • 1 small onion, finely chopped
  • 2 teaspoons finely chopped garlic
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 3 tablespoons olive oil
  • 1 cup grape or cherry tomatoes, halved
  • 1/2 cup drained bottled roasted red peppers, rinsed and chopped
  • 3/4 cup water
  • 2 tablespoon fresh parsley, roughly chopped
Instructions
  1. Heat the oven to 400 degrees. Combine all of the ingredients for the quinoa patties in a bowl. Form small, 1-inch thick patties and place them on a baking sheet.
  2. Bake the quinoa cakes for about 15 minutes, then flip and bake for another 5 to 10 minutes or until golden brown.
  3. Toss eggplant with 1 teaspoon salt in a colander and drain 30 minutes. Squeeze handfuls of eggplant to extract liquid, then pat dry.
  4. Cook eggplant, onion, garlic, oregano, thyme, and 1/4 teaspoon each of salt and pepper in oil in a 12-inch heavy skillet over medium heat, covered, stirring occasionally, until softened, about 5 minutes. Stir in tomatoes, roasted peppers, and water and simmer, covered, stirring occasionally, until eggplant is very tender and mixture is thick (if dry, thin with a little water), about 10 minutes.
  5. Spoon eggplant mixture over the quinoa patties to serve.

Lindsey Witmer Collins Helps Grads Change the World with Personalized Health Coach Apps




Technology is perhaps the only issue affecting modern life as powerfully as the global health crisis. Like the health crisis, technology can be something that stunts our growth as humans (rememberWall-E, anyone?), or an opportunity for positive, far-reaching transformation. IIN grad Lindsey Witmer Collins has made it her mission to make sure it’s the latter, harnessing the power of technology to unite and empower people in the name of wellness.
While a student at IIN in 2010, Lindsey had an idea that would keep her up all night: she wanted to build a Health Coach app. In fact, she spent her entire spring vacation writing a business plan, sketching out screens while in a hot tub at Costa del Sol. The fact that she’d never built an app before didn’t faze her. “Some cliffs just beg to be jumped off,” she says. She received a seed grant in 2011 to build the app, and got to work. After much trial and error (and time and money, and consultation with an engineer and MIT professor), MyOmBody launched, and made a huge splash in the tech world, being named one of the “Ten Startups to Watch” by the Boston Globe.
Lindsey’s experience building the app left her bothered by how difficult it is for anyone not in the tech world to get an app out in the market. With mobile devices being an increasingly integral part of our lives, this sets non-tech entrepreneurs at a significant disadvantage.
“The software we’re seeing and interacting with on our phones, which we check an average of every 6 minutes, is affecting who we are and who we’ll become,” Lindsey explains. “This unheard-of level of influence is why our phones have surpassed television as the most valuable advertising real estate in the world.”
This means that mobile allows for huge reach, big change, and connection on an unprecedented level. Without technical training, though, Health Coaches can’t tap into this rich reservoir—something Lindsey knew needed to change. “IIN graduates are the kind of people who have messages worth spreading,” Lindsey says. “If we’re able to put positive, life-affirming content on people’s phones, then we can have a real impact on things.”
With this vision as her inspiration, Lindsey set about building Health Coach apps for other IIN graduates. They share the same core software, but each is tailored to the unique Coach, focusing on a specific health niche or including special features. Users get daily content from the Coach, providing a sort of curriculum in bite-sized pieces, which helps keep the user and Coach connected. Lindsey has built 15 apps so far, and they promise exciting possibilities for the future: there are progress tracking tools, journal prompts, factual information, inspirational content, video, voice, images—basically anything you can dream up, Lindsey can make happen.
The apps have accelerated the Health Coaches’ reach by 7 to 40 new downloads per day, amplifying their list growth rate by up to 400%. “An app is definitely a good way to build a following fast,” Lindsey says. With nearly 18,000 downloads so far on every continent (except Antarctica), Lindsey’s vision of creating a positive impact on the world through technology is already becoming real. Or, as she modestly puts it, “with mobile, you can sweep the globe pretty darn fast.”
Despite the success, the acclaim, and the validation of seeing her vision realized, when I asked Lindsey about the most rewarding part of her experience, her answer was simple: “Making new friends. The software is for friends, and friends I haven’t met yet.”
And she means it. Her goal is to launch 50 new apps this year and reach 100,000 phones around the world. She’s so passionate about this goal that she’s giving 10% off to any IIN grads who read this post and want an app of their own. Not only did the app allow her voice reach people she’d never met, but it also set her apart from the crowd. “It felt like a rare and wonderful thing to have an app,” she says. “In a sea of business cards, I now share my app!” Launching the app, Kale Yeah, has grown Lacy’s client list and changed the way she feels about her business. “The process of writing the content and creating the app has helped me get really clear on my brand,” she says. “You can absolutely feel me in the app! It’s full of valuable information delivered in a kind and loving way, with a heaping helping of humor.” In fact, she’s been so encouraged by the response to Kale Yeah that she’s started writing content for a second app. “Creating apps and working with Lindsey is addictive—in a good way!”
Sue Kemple
As a former school principal who had struggled with weight problems and extreme stress before transforming her life with healthy eating and exercise, Sue Kemple felt driven to help others do the same. Still, when Lindsey announced in a private Facebook group that she would be making personalized apps for Health Coaches, Sue wasn’t interested. “I was quite busy with a new project at the time and didn’t think I needed to bother with my own app,” she says. After some nudging from Lindsey, Sue climbed on board. The result is Campus Coaches, a service that provides employees in schools with a cost-free wellness program, as well as financial compensation—and a foot in the door—for the Health Coaches working with the schools. “It’s an awesome app, and I’m very optimistic about its success,” Sue says. “It’s uniquely designed to address the needs of teachers.” Looking forward, Lindsey will help Sue build an app that focuses on students. “I’m excited about working with Lindsey again,” Sue says. “She is a model entrepreneur with amazing insight, dogged determination, and a joyful spirit that infuses everything she does.”
María José Flaqué

“I was in love with the idea,” says María José Flaqué of her reaction upon hearing about Lindsey’s offer to build personalized Health Coach apps for IIN alums. Maria had come a long way already—before enrolling in IIN, she’d used food and lifestyle changes to treat her own fibromyalgia, anxiety, and depression—and was eager to help others in similar situations, particularly Latin American women. After realizing that no Spanish-language apps used an integrated, holistic approach to wellness, Maria knew she needed to fill that gap, and Lindsey helped her do so, creating Mujer Holistica. “I’m super happy,” she says. “Our app was downloaded hundreds of times in its first month in countries like Mexico, Chile, Spain, and Columbia.” In the future, Maria hopes to reach more Spanish-speaking countries, giving resources to women who don’t have access to holistic Health Coaching while also expanding her practice. “I see both my app and my practice growing,” she says. “It’s very exciting!”

7 Things Your Teeth Say About Your Health

Be alert to these warning signs of trouble.

Some messages coming out of your mouth bypass the vocal chords. Turns out that your teeth, gums, and surrounding tissues also have plenty to say -- about your overall health.
"Your mouth is connected to the rest of your body," says Anthony Iacopino, dean of the University of Manitoba Faculty of Dentistry and a spokesperson for the American Dental Association. "What we see in the mouth can have a significant effect on other organ systems and processes in the body. And the reverse is also true: Things that are going on systemically in the body can manifest in the mouth."
So stay attuned to the following warning messages, and have worrisome symptoms checked out by a dentist or doctor.

Dental warning #1: Flat, worn teeth plus headache

Sign of: Big-time stress
Many people are surprised to learn they're tooth-grinders. After all, they do this in their sleep, when they're not aware of it. And they underestimate the physical toll that stress can place on the body. "Crunching and grinding the teeth at night during sleep is a common sign of emotional or psychological stress," says Iacopino.
You can sometimes see the flatness on your own teeth, or feel it with the tongue. Or the jaw may ache from the clenching.
What else to look for: Headaches, which are caused by spasms in the muscles doing the grinding. Sometimes the pain can radiate from the mouth and head down to the neck and upper back, Iacopino says. Mouth guards used at night can relieve the symptoms and protect teeth.

Dental warning #2: Cracking, crumbling teeth

Sign of: Gastroesophageal reflux disease (GERD)
Older adults, especially, are vulnerable to teeth that appear to be cracking or crumbling away. The enamel becomes thin and almost translucent. But this erosion isn't a normal consequence of aging. In fact, it can happen at any age.
Disintegrating teeth are usually caused by acid that's coming up from the stomach and dissolving them, Iacopino says. The cause: Gastroesophageal reflux disease (GERD, also called acid reflux disease). GERD causes stomach acid to back up into the esophagus -- and from there, it's a short distance to the mouth for some of the damaging acid. GERD is a chronic disorder caused by damage or other changes to the natural barrier between the stomach and the esophagus.
What else to look for: Dry mouth and heartburn are related GERD symptoms. (But in an older adult in someone else's care -- in a nursing home, for example -- these complaints may go unreported.) Cracking or chipping teeth in a younger person is also a telltale sign of bulimia, the eating disorder in which the sufferer causes herself (or himself) to vomit before digesting. Same net result: Stomach acid washes up into the mouth, over time disintegrating the tooth enamel.

Dental warning #3: Sores that won't go away

Sign of: Oral cancer
Many people bite the insides of their mouth as a nervous habit. Others sometimes bite the gum accidentally, creating a sore. But when an open sore in the mouth doesn't go away within a week or two, it always warrants showing to a dentist or doctor. "We all injure our oral tissues, but if an area persists in being white or red rather than the normal healthy pink, this needs to be evaluated to rule out oral cancer," says Susan Hyde, an associate professor of clinical dentistry at the University of California, San Francisco, School of Dentistry.
More than 21,000 men and 9,000 women a year are diagnosed with oral cancer, according to the National Cancer Institute. Most are over age 60. Oral cancer has a survival rate of only 35 percent, Iacopino says, but this is mainly because cases are often detected too late. Smokers are six times more likely to develop oral cancer, but one in four oral cancers develop in non-smokers.
What else to look for: Suspicious oral ulcers tend to be raised sores and often have red or white (or red and white) borders. They may lurk underneath the tongue, where they're hard to see. Bleeding and numbness are other signs, but sometimes the only sign is a sore that doesn't seem to go away. A biopsy usually follows a visual check.

Dental warning #4: Gums growing over teeth

Sign of: Medication problems
If you notice your gum literally growing over your tooth, and you're taking a medication for heart disease or seizures or you take drugs to suppress your immune system (such as before a transplant), it's well worth mentioning this curious development to your prescribing doctor.
"A swelling of the gums to where it grows over the teeth is a sign the dosage or the medication need to be adjusted," the ADA's Anthony Iacopino says. Certain drugs can stimulate the growth of gum tissue. This can make it hard to brush and floss, inviting tooth decay and periodontal disease.
What else to look for: The overgrowth can cause an uncomfortable sensation. In extreme cases, the entire tooth can be covered.

Dental warning #5: Dry mouth

Sign of: Sjogren's syndrome, diabetes
Many things can cause dry mouth, from dehydration and allergies to smoking and new medications. (In fact, hundreds of drugs list dry mouth as a side effect, including those to treat depression and incontinence, muscle relaxants, antianxiety agents, and antihistamines.) But a lack of sufficient saliva is also an early warning of two autoimmune diseases unrelated to medicine use: Sjogren's syndrome and diabetes.
In Sjogren's, the white blood cells of the body attack their moisture-producing glands, for unknown reasons. Four million Americans have Sjogren's, 90 percent of them women. Twenty-four million people in the U.S. have type 1 or type 2 diabetes, a metabolic disease caused by high blood sugar.
What else to look for: Other signs of diabetes include excessive thirst, tingling in the hands and feet, frequent urination, blurred vision, and weight loss. In Sjogren's, the eyes are dry as well as the mouth, but the entire body is affected by the disorder. Because its symptoms mimic other diseases (such as diabetes), people are often misdiagnosed and go several years before being properly diagnosed.

Dental warning #6: White webbing inside cheeks

Sign of: Lichen planus
The last thing you might expect to discover while brushing your teeth is a skin disease. But it happens. Lichen planus, whose cause is unknown, is a mild disorder that tends to strike both men and women ages 30 to 70. The mucus membranes in the mouth are often a first target.
Oral lichen planus looks like a whitish, lacy pattern on the insides of the cheeks. (The name comes from the same roots as tree lichen, a lichen that has a similar webbed, bumpy appearance.) Seventy percent of lesions appear in the mouth before they strike other parts of the body, says professor Anthony Iacopino.
What else to look for: Another common area where a lichen planus rash may appear is the vagina. Lichen planus often goes away on its own, but sometimes treatment is necessary.

Dental warning #7: Crusting dentures

Sign of: Potential aspiration pneumonia
Most people don't connect dentures (false teeth) with pneumonia, other than to think they're both words that often refer to the world of the elderly. And yet the two have a potentially deadly connection. "A leading cause of death in older people is aspiration pneumonia, often from inhaling debris around the teeth and dentures," Iacopino says.
In aspiration pneumonia, foreign material is breathed into the lungs and airway, causing dangerous (even fatal) inflammation. Too often, the problem stems from people in the care of others -- those in nursing homes, for example -- who fail to clean dentures properly. Dentures need to be removed daily from the mouth, cleaned with a special brush, and stored in a cleansing solution.
What else to look for: A soft, crusty material developing around dentures. With proper cleaning, though, you don't have to worry about other red flags. "It's amazing. You can get a 100-percent reduction in what's otherwise a leading cause of death for denture wearers," Iacopino says.
